Crunchy Peanut Butter Balls
Prep time 10 minutes
1 cup Mayvers smooth peanut butter
1 cup natural muesli OR ancient grains
1 cup raw nuts
2 tbsp honey OR maple syrup
½ cup shredded coconut
4-5 tbl boiling water
Add all the ingredients in to a food processor and process until mixed together, process until smooth, use a tablespoon to roll in to balls and refrigerate in a sealed plastic container.
Keeps in the fridge for 14 days.

1/2 cup brown rice
1 medium (185g) can tuna in oil, drained ½ cup cooked brown lentils (e.g. canned, rinsed, washed)
1 medium (120g) tomato, diced
1 small Lebanese cucumber, diced
2 sprigs Continental Parsley, chopped
½ cup frozen green peas
Zest and juice of 1 lemon
1 tablespoon baby capers
Cook brown rice as per packet instructions. Set aside in a mixing bowl to cool. Cook peas until tender (microwave for 90 seconds on high). Remove zest from lemon and add to rice. Stir in lentils. Add tomato, cucumber, capers, parsley and lemon juice and mix well. Serve garnished with pine nuts.
